An Organic Balsamic vinegar is something we’ve wanted to do for some time. Just like when we started with our olives we had a lot to learn…and taste. We ran into a few hurdles –
First, Balsamic Vinegar is not something we could produce. We know how to grow and press organic olives for award winning organic extra virgin olive oil. Balsamic Vinegar is an entirely different fruit and process. We knew we wanted something authentic and real to pair with our organic olive oil. It was undeniable in our research that Modena, Italy was where our balsamic vinegar needed to be sourced.
Second, with our company being certified organic we also wanted the vinegar to be organic. Finding a high quality vinegar that was also organic proved to be challenging.
Finally, we found this vinegar. Organically grown and aged in Modena, Italy. High quality with a balanced sweet to sour ratio. Deep brown in color with an aroma that is persistent, delicate, and slightly acidic with woody overtones. It is made with 55% grape must from Lambrusco and Trebbiano grapes. It has an acidity of 6%.
